Ingredients

- 2 lbs beef chuck roast, cut into cubes
- 1 large onion, chopped
- 4 cloves garlic, minced
- 8 oz cremini or button mushrooms, sliced
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tbsp cornstarch
- Salt and pepper, to taste
- 1 tbsp vegetable oil
Instructions
- Season the beef cubes with salt and pepper.
- In a skillet, heat oil over medium-high heat and sear the beef until browned on all sides.
- Add chopped onions and minced garlic to the skillet and sauté until fragrant.
- Transfer the beef and onion-garlic mixture to the crock pot.
- Add mushrooms, thyme, rosemary, beef broth, and Worcestershire sauce, stirring to combine.
- Cover and cook on low for 6-8 hours, or until the meat is tender.
- About 30 minutes before serving, mix cornstarch with cold water and stir into the crock pot to thicken the gravy.
- Serve over mashed potatoes, noodles, or rice, garnished with fresh herbs.
Notes
Feel free to substitute the chuck roast with sirloin or a meat alternative for a vegetarian version.
