Ingredients

  • 2 lbs beef chuck roast, cut into cubes
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp cornstarch
  • Salt and pepper, to taste
  • 1 tbsp vegetable oil

Instructions

  1. Season the beef cubes with salt and pepper.
  2. In a skillet, heat oil over medium-high heat and sear the beef until browned on all sides.
  3. Add chopped onions and minced garlic to the skillet and sauté until fragrant.
  4. Transfer the beef and onion-garlic mixture to the crock pot.
  5. Add mushrooms, thyme, rosemary, beef broth, and Worcestershire sauce, stirring to combine.
  6. Cover and cook on low for 6-8 hours, or until the meat is tender.
  7. About 30 minutes before serving, mix cornstarch with cold water and stir into the crock pot to thicken the gravy.
  8. Serve over mashed potatoes, noodles, or rice, garnished with fresh herbs.

Notes

Feel free to substitute the chuck roast with sirloin or a meat alternative for a vegetarian version.
