- 2 pounds beef tips (chuck roast recommended)
- 8 ounces fresh cremini or button mushrooms, sliced
- 1 cup beef broth (low sodium optional)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 packet brown gravy mix
- 1 tablespoon fresh thyme or parsley (or to taste)
- Salt and pepper to taste
- 1 tablespoon Worcestershire sauce (optional)
Instructions
- Season the beef tips generously with salt and pepper.
- Heat a skillet over medium-high heat and add oil. Sear the beef on all sides until golden brown.
- Sauté chopped onions and garlic in the same skillet until softened. Add the mushrooms last and cook until golden.
- Transfer the beef and vegetables to a crock pot. Pour in the beef broth until covered.
- Sprinkle the gravy mix over the mixture and gently stir to combine.
- Add fresh herbs and Worcestershire sauce if using.
- Cover and cook on low for 6-8 hours, until beef is fork-tender.
- For thicker gravy, whisk cornstarch with cold water and add during the last 30 minutes.
- Serve over mashed potatoes, rice, or buttered noodles, garnishing with fresh parsley.
