- 2 lbs beef tips (chuck or sirloin)
- 2 cups beef broth
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 tsp dried thyme
- 2 tsp dried rosemary
- 8 oz fresh cremini or button mushrooms, sliced
- 1/2 cup heavy cream
- 2 carrots, chopped (optional)
- 2 potatoes, chopped (optional)
- Salt and pepper to taste
Instructions
- Heat a tablespoon of oil in a skillet over medium heat. Pat beef tips dry, season with salt and pepper, and sear in batches until browned.
- Add diced onions to the skillet and brown slightly, then add minced garlic and cook until fragrant.
- Transfer seared beef tips, sautéed onions, garlic, mushrooms, and herbs to the crock pot. Pour in beef broth to cover.
- Cover and set crock pot on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in heavy cream and adjust seasoning if necessary.
- Serve over cooked rice, mashed potatoes, or buttered noodles, garnished with fresh parsley.
Notes
For substitutions, consider using chicken or vegetables for a different dish. Store leftovers for up to 3 days in the fridge or freeze for up to 3 months.
