Instructions
- Prepare your ingredients by dicing the onions, mincing the garlic, and chopping the bell peppers.
- In the crockpot, layer the bottom with diced onions and garlic.
- Add the chicken, followed by the canned tomatoes, black beans, and corn.
- Sprinkle in the spices, then pour the broth over everything and mix gently.
- Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken in the pot using two forks and mix everything well before serving.
- Serve with crispy tortilla strips, chopped cilantro, and a squeeze of fresh lime.
