Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 8 ounces mushrooms, chopped (cremini or button)
  • 1 can (14 ounces) crushed or diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and diced carrots, and cook for another 2-3 minutes until fragrant.
  4. Add chopped mushrooms and cook until browned, about 5 minutes.
  5. Pour in canned tomatoes and vegetable broth, then add lentils and stir well.
  6. Season with salt, black pepper, and red pepper flakes if desired. Let simmer for 25-30 minutes, stirring occasionally.
  7. In the last few minutes, mix in chopped fresh herbs. Adjust seasonings as needed.
  8. Serve warm over pasta or with crusty bread.
