A warm and comforting lentil bolognese that brings joy and family together around the table.
Ingredients

- 1 cup green or brown lentils
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, diced
- 8 ounces mushrooms, chopped (cremini or button)
- 1 can (14 ounces) crushed or diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onions and sauté until translucent, about 5 minutes.
- Stir in minced garlic and diced carrots, and cook for another 2-3 minutes until fragrant.
- Add chopped mushrooms and cook until browned, about 5 minutes.
- Pour in canned tomatoes and vegetable broth, then add lentils and stir well.
- Season with salt, black pepper, and red pepper flakes if desired. Let simmer for 25-30 minutes, stirring occasionally.
- In the last few minutes, mix in chopped fresh herbs. Adjust seasonings as needed.
- Serve warm over pasta or with crusty bread.
Notes
Feel free to substitute ingredients based on availability, such as using zucchini or eggplant instead of mushrooms.
