Ingredients

- 1 lb Italian or andouille sausage, diced
- 2 medium sweet potatoes, cubed
- 4 cups kale, chopped
- 2 cloves garlic, minced
- 1 medium onion, diced
- 4 cups chicken or vegetable broth
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Chop sweet potatoes and wash the kale, removing tough stems. Dice the sausage.
- In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned and crispy.
- Add diced onions and minced garlic, cooking until translucent and fragrant, about 3–5 minutes.
- Add sweet potatoes and stir to combine, then pour in broth and bring to a gentle simmer.
- Let the soup simmer for about 15–20 minutes, until sweet potatoes are fork-tender.
- Mix in chopped kale and allow it to wilt for a few minutes.
- Season with salt, pepper, and herbs to taste. Serve hot.
Notes
This soup is versatile and can be made with ground turkey or chicken instead of sausage. Spinach or Swiss chard can replace kale, and butternut squash can substitute sweet potatoes.
