- 4–5 cups vegetable or chicken broth
- 3 cloves garlic, minced
- 1 tablespoon cumin
- 1 tablespoon smoked paprika
- 1 tablespoon chili powder
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat and sauté chopped onion and minced garlic until fragrant and onion is translucent.
- Add cumin, smoked paprika, and chili powder. Let bloom for a minute.
- Add diced bell peppers, carrots, and zucchini. Stir for about 5-7 minutes until vegetables soften.
- Incorporate canned tomatoes and drained beans. Stir for even distribution.
- Pour in broth; bring to a gentle simmer.
- Simmer for 20-30 minutes to meld flavors.
- Adjust seasoning with salt and pepper and serve with garnishes like cilantro or jalapeños.
Notes
For added brightness, a squeeze of fresh lime juice just before serving is a delightful finish.
