Description

Ingredients

  • 2 lbs beef chuck roast, cut into pieces
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup red wine
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • Cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef pieces until browned on all sides, about 3-4 minutes per side.
  2. Remove the beef and set aside. In the same pot, sauté diced onions, carrots, and garlic until softened.
  3. Deglaze the pot with red wine, scraping up any browned bits from the bottom.
  4. Return the beef to the pot, add beef broth, thyme, rosemary, and bay leaves.
  5. Bring to a gentle boil. Cover and simmer on low for 2-3 hours until the beef is fork-tender.
  6. Adjust seasonings as needed in the last half hour of cooking.
  7. Serve hot, garnished with fresh parsley, alongside crusty bread or over rice or noodles.

Notes

For added depth, incorporate mushrooms or seasonal vegetables. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
