- 8 oz cream cheese
- 1/2 cup heavy cream
- 2 eggs
- 1/2 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, cold
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine flour and salt. Cut in butter until coarse crumbs form. Gradually add cold water until dough holds together.
- Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
- Beat cream cheese and heavy cream in a mixing bowl until smooth. Add eggs, sugar, and vanilla; mix well.
- Roll out dough on a floured surface to 1/8-inch thickness and cut circles for tart pans.
- Press dough into tart pans and fill with cheese filling, about 3/4 full.
- Bake for 20-25 minutes until set but slightly jiggly.
- Cool for a few minutes before serving warm for the gooey center.
Notes
For best results, avoid overmixing the filling and chill the dough properly.
