Ingredients

  • 1 lb ground beef
  • 1 diced onion
  • 2 cloves minced garlic
  • 4 cups beef broth
  • 2 chopped russet or Yukon gold potatoes
  • 2 sliced carrots
  • 2 diced celery stalks
  • 2 cups shredded cheddar cheese
  • 1 cup milk or cream
  • 2 tbsp yellow mustard

Instructions

  1. In a large pot, brown the ground beef over medium heat until no longer pink, then drain excess grease.
  2. Add onion, carrots, and celery; sauté for about 5 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
  3. Pour in beef broth and stir well, scraping any browned bits from the bottom.
  4. Add the chopped potatoes and bring to a boil, then reduce heat and let simmer for 15 minutes until fork-tender.
  5. Lower the heat; stir in milk (or cream) and cheese until melted. Add mustard, salt, and pepper to taste.
  6. Before serving, sprinkle with fresh herbs or crispy bacon bits as a garnish.
  7. Ladle soup into bowls, garnish with extra cheese if desired, and serve warm.

Notes

Soup thickens as it cools; add more broth or milk when reheating if necessary.
