- 1 lb ground beef
- 1 diced onion
- 2 cloves minced garlic
- 4 cups beef broth
- 2 chopped russet or Yukon gold potatoes
- 2 sliced carrots
- 2 diced celery stalks
- 2 cups shredded cheddar cheese
- 1 cup milk or cream
- 2 tbsp yellow mustard
Instructions
- In a large pot, brown the ground beef over medium heat until no longer pink, then drain excess grease.
- Add onion, carrots, and celery; sauté for about 5 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
- Pour in beef broth and stir well, scraping any browned bits from the bottom.
- Add the chopped potatoes and bring to a boil, then reduce heat and let simmer for 15 minutes until fork-tender.
- Lower the heat; stir in milk (or cream) and cheese until melted. Add mustard, salt, and pepper to taste.
- Before serving, sprinkle with fresh herbs or crispy bacon bits as a garnish.
- Ladle soup into bowls, garnish with extra cheese if desired, and serve warm.
Notes
Soup thickens as it cools; add more broth or milk when reheating if necessary.
