- 1 egg (for egg wash) or soy milk with maple syrup (for vegan option)
Instructions
- Prepare the Filling: Wash and pit cherries, then chop if fresh. Combine cherries, sugar, cornstarch, and lemon juice in a saucepan. Cook over medium heat for 5-10 minutes until thickened. Add vanilla and cool.
- Preheat the Oven: To 400°F (200°C) and line a baking sheet with parchment paper.
- Roll Out the Dough: Roll out the puff pastry to 1/8-inch thickness and cut into 5×5-inch squares.
- Fill the Pastry: Spoon cherry filling into the center of each square.
- Seal the Turnovers: Fold pastry to create triangles and crimp edges with a fork.
- Brush with Egg Wash: Apply egg wash to the tops.
- Bake: Bake for 15-20 minutes until golden brown.
- Cool and Serve: Let cool slightly on a wire rack before serving.
