- 1 cup sliced almonds or hazelnuts
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup corn syrup
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1 cup dark chocolate (for drizzling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Chop the nuts finely and toast them in a dry pan over medium heat for about 5 minutes.
- In a saucepan, melt the butter and brown sugar together over medium heat, stirring until the sugar dissolves and the mixture bubbles.
- Stir in corn syrup, vanilla extract, and flour until well-combined. Fold in the toasted nuts.
- Drop spoonfuls of the mixture onto the baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes until golden. Keep an eye on them!
- Let them cool for a few minutes before transferring to a wire rack.
- Melt the chocolate and drizzle over the cooled cookies. Let it set before serving.

Notes
For variations, try using walnuts or pecans instead of almonds/hazelnuts. They can also be frozen for up to three months.
