Delightful homemade cookies with a nutty base and rich dark chocolate drizzle, perfect for sharing and celebrating memories.


Ingredients

  • 1 cup sliced almonds or hazelnuts
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup corn syrup
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Chop the nuts finely and toast them in a dry pan over medium heat for about 5 minutes.
  3. In a saucepan, melt the butter and brown sugar together over medium heat, stirring until the sugar dissolves and the mixture bubbles.
  4. Stir in corn syrup, vanilla extract, and flour until well-combined. Fold in the toasted nuts.
  5. Drop spoonfuls of the mixture onto the baking sheet, leaving space between each cookie.
  6. Bake for 10-12 minutes until golden. Keep an eye on them!
  7. Let them cool for a few minutes before transferring to a wire rack.
  8. Melt the chocolate and drizzle over the cooled cookies. Let it set before serving.

Notes

For variations, try using walnuts or pecans instead of almonds/hazelnuts. They can also be frozen for up to three months.
