Description
A comforting and flavorful one-pan meal featuring juicy chicken and vibrant seasonal vegetables, all glazed with a tangy balsamic vinegar reduction.
Ingredients
- Boneless chicken (breast or thighs)
- Balsamic vinegar
- Fresh garlic cloves
- Fresh herbs (rosemary, thyme, or basil)
- Olive oil
- Seasonal vegetables (bell peppers, zucchini, or spinach)
- Salt and pepper
Instructions
- Prepare the ingredients: Dice the chicken into bite-sized pieces and chop the vegetables.
- Heat the pan: In a large skillet, heat some olive oil over medium-high heat until shimmering.
- Sauté the chicken: Add chicken pieces, season with salt and pepper, and sauté until golden brown on all sides (about 5–7 minutes).
- Add aromatics: Toss in minced garlic and chosen herbs and sauté for another 1–2 minutes until fragrant.
- Mix in the vegetables: Stir in seasonal veggies and cook until softened.
- Add balsamic vinegar: Reduce heat to medium, pour in balsamic vinegar, and stir. Let it simmer for about 10–12 minutes until chicken is cooked through and sauce is reduced.
- Serve: Serve directly from the pan or over rice or polenta. Garnish with a wedge of lemon if desired.
Notes
For a vegetarian option, substitute chicken with firm tofu and adjust cooking time. Marinating the chicken in balsamic vinegar for a few hours can enhance the flavor.
