- 1/4 cup unsalted butter, softened
- 1 teaspoon pure peppermint extract
- 1/4 cup heavy cream (or coconut cream)
- 8 ounces dark chocolate
- 1 tablespoon coconut oil (optional, for thinning chocolate)
Instructions
- In a mixing bowl, combine powdered sugar, softened butter, and peppermint extract. Mix until smooth and creamy. Adjust consistency with cream if necessary.
- Shape the mixture into small balls and flatten them into discs.
- Chill the patties on a wax paper-lined tray until firm, about 30 minutes.
- Melt the dark chocolate in a double boiler or microwave until smooth.
- Dip each patty into the melted chocolate and allow excess to drip off.
- Place the dipped patties back on wax paper and refrigerate until chocolate hardens, about 30 minutes.
- Store in an airtight container in the fridge until ready to serve.
Notes
For a sweeter option, you can substitute milk chocolate for the dark chocolate. Ensure the chocolate is tempered for best results.
