- 1 cup plain yogurt
- 2 tbsp garam masala
- 1 tbsp ground coriander

- 1 tbsp paprika
- 1 tsp turmeric
- 1 tsp cayenne pepper (optional)
- Juice of 1 fresh lemon
- 4 cloves garlic, minced
- 1 inch piece of ginger, minced
- 2 tbsp vegetable oil
Instructions
- Marinate the Chicken: In a mixing bowl, combine the yogurt with the spices, garlic, ginger, and lemon juice. Let the chicken bathe in this luscious marinade for at least 2 hours, preferably overnight.
- Prepare to Grill: Preheat your grill on medium-high heat or oven to 425°F (220°C) with a baking tray beneath to catch drippings.
- Grill the Chicken: Remove the chicken from the marinade and shake off excess. Grill on each side for 6-8 minutes until fully cooked and charred.
- Check for Doneness: Ensure the internal temperature reaches 165°F (75°C). Use a meat thermometer for larger pieces.
- Rest and Serve: Allow the chicken to rest for 5-10 minutes before serving to keep it moist.
- Garnish and Enjoy: Serve garnished with freshly chopped cilantro and lemon wedges on the side.
