- 2 salmon fillets
- 3 tablespoons unsalted butter
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 cup jasmine or brown rice
- 1 cup fresh shiitake or button mushrooms, sliced
- Fresh cilantro or parsley, for garnish
- Salt and pepper, to taste
- 1 lemon, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Melt butter in a small saucepan over low heat. Stir in honey, garlic, salt, and pepper; let cool slightly.
- Pat salmon dry and place on lined baking sheet. Brush with honey butter mixture.
- Roast salmon for 12-15 minutes, or until it flakes easily with a fork.
- Cook rice according to package instructions.
- Sauté mushrooms in a skillet with butter, seasoning with salt and pepper, until golden brown (5-7 minutes).
- Assemble the bowl: spoon rice, top with salmon, mushrooms, herbs, and lemon wedge.
