Ingredients

  • 3 tablespoons unsalted butter
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 cup jasmine or brown rice
  • 1 cup fresh shiitake or button mushrooms, sliced
  • Fresh cilantro or parsley, for garnish
  • Salt and pepper, to taste
  • 1 lemon, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Melt butter in a small saucepan over low heat. Stir in honey, garlic, salt, and pepper; let cool slightly.
  3. Pat salmon dry and place on lined baking sheet. Brush with honey butter mixture.
  4. Roast salmon for 12-15 minutes, or until it flakes easily with a fork.
  5. Cook rice according to package instructions.
  6. Sauté mushrooms in a skillet with butter, seasoning with salt and pepper, until golden brown (5-7 minutes).
  7. Assemble the bowl: spoon rice, top with salmon, mushrooms, herbs, and lemon wedge.
