Ingredients

  • 1/4 cup honey
  • 1/4 cup unsalted butter (melted)
  • 2 eggs (beaten)
  • 1 cup milk (or plant-based alternative)
  • 1 cup flour (or gluten-free flour)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch casserole dish with butter or non-stick spray.
  3. In a large mixing bowl, combine sweet corn, honey, melted butter, beaten eggs, milk, flour, and salt and pepper until smooth.
  4. Add optional extras like sautéed mushrooms or cheese if desired and mix well.
  5. Pour the mixture into the prepared casserole dish.
  6. Bake for 45-50 minutes or until set and golden brown on top.
  7. Allow to cool slightly before serving.

Notes

Keep the casserole covered with foil for the first 25 minutes of baking to prevent over-browning. Remove the foil for the last 20 minutes.
