- 2 tablespoons olive oil

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots, then cut them into uniform sizes.
- In a mixing bowl, combine the carrots with olive oil, honey, thyme, salt, and pepper, ensuring they are well-coated.
- Spread the carrots out on a baking sheet in a single layer.
- Bake for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Remove from the oven and serve warm, topped with additional thyme or honey if desired.
