Deliciously sweet and earthy honey roasted carrots, enhanced with fresh thyme for a flavorful side dish.


Ingredients

  • 1 pound fresh young carrots, peeled and cut into 12 inch pieces
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots, then slice them into even-sized pieces.
  3. In a large mixing bowl, combine carrots, olive oil, honey, thyme, salt, and pepper. Toss until well-coated.
  4. Spread the carrots on a baking sheet lined with parchment paper.
  5. Roast for 20-25 minutes, flipping halfway through, until tender and caramelized.
  6. Remove from oven, let cool slightly, garnish with extra thyme, and serve warm.

Notes

For a different flavor, substitute honey with maple syrup, and consider adding orange juice or zest.
