Deliciously sweet and earthy honey roasted carrots, enhanced with fresh thyme for a flavorful side dish.

- 1 pound fresh young carrots, peeled and cut into 1–2 inch pieces
- 2 tablespoons honey
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots, then slice them into even-sized pieces.
- In a large mixing bowl, combine carrots, olive oil, honey, thyme, salt, and pepper. Toss until well-coated.
- Spread the carrots on a baking sheet lined with parchment paper.
- Roast for 20-25 minutes, flipping halfway through, until tender and caramelized.
- Remove from oven, let cool slightly, garnish with extra thyme, and serve warm.
Notes
For a different flavor, substitute honey with maple syrup, and consider adding orange juice or zest.
