- 2 cups raw walnuts
- 1 cup fresh or dried figs, halved or quartered
- 1/4 cup honey
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1 tablespoon fresh thyme or rosemary (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Spread the raw walnuts on a lined baking sheet, drizzle with olive oil and honey, and sprinkle a pinch of salt.
- Toss the walnuts gently to coat them evenly.
- Roast in the oven for 10 to 15 minutes, stirring halfway through, until golden and fragrant.
- Remove from the oven and allow to cool slightly before mixing in the figs.
- Add herbs and extra honey if desired, mixing gently to combine.
- Serve warm, either on their own or atop a salad.
Notes
Store leftovers in an airtight container at room temperature for up to a week. These can also be frozen for about three months.
