Delicious hot chocolate cookies that are soft, fudgy, and packed with marshmallows, perfect for winter gatherings.

- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, at room temperature
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs, at room temperature
- 1 cup semi-sweet chocolate chips
- 2 cups mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking soda, cocoa powder, and salt.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3–4 minutes).
- Add in the eggs, one at a time, mixing well after each addition.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips and mini marshmallows.
- Using a cookie scoop, place dough balls on the prepared baking sheet, leaving enough space between each.
- Bake for 10–12 minutes until the edges are set and centers remain soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
For extra flavor, drizzle melted chocolate on top or sprinkle a pinch of sea salt before baking.
