Description

Delicious hot chocolate cookies that are soft, fudgy, and packed with marshmallows, perfect for winter gatherings.


Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, at room temperature
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 cup semi-sweet chocolate chips
  • 2 cups mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, cocoa powder, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3–4 minutes).
  4. Add in the eggs, one at a time, mixing well after each addition.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips and mini marshmallows.
  7. Using a cookie scoop, place dough balls on the prepared baking sheet, leaving enough space between each.
  8. Bake for 10–12 minutes until the edges are set and centers remain soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For extra flavor, drizzle melted chocolate on top or sprinkle a pinch of sea salt before baking.
