  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, and baking soda.
  3. In a separate bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs and vanilla, mixing until well combined.
  5. Slowly add the dry ingredients into the wet mixture, stirring just until combined.
  6. Fold in the mini marshmallows.
  7. Scoop the dough onto the prepared baking sheet, spacing them about two inches apart.
  8. Bake for 10-12 minutes, or until the edges look set but the centers still feel a bit soft.
  9. Cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.

Notes

For a nuttier flavor, consider using whole wheat flour. You can also swap regular butter with coconut oil or vegan butter for dairy-free options.
