- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, and baking soda.
- In a separate bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla, mixing until well combined.
- Slowly add the dry ingredients into the wet mixture, stirring just until combined.
- Fold in the mini marshmallows.
- Scoop the dough onto the prepared baking sheet, spacing them about two inches apart.
- Bake for 10-12 minutes, or until the edges look set but the centers still feel a bit soft.
- Cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.
Notes
For a nuttier flavor, consider using whole wheat flour. You can also swap regular butter with coconut oil or vegan butter for dairy-free options.
