- 1 sweet yellow onion, chopped
- 2 garlic cloves, minced
- 2 red or yellow bell peppers, sliced
- 2 carrots, chopped
- 2 tbsp good quality Hungarian paprika
- 2 tbsp tomato paste
- 4 cups beef broth
- Fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large skillet, heat oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Increase heat to medium-high and add the beef cubes. Sear on all sides until browned, about 8-10 minutes.
- Add the bell peppers and carrots, cooking until they start to soften, about 5 minutes.
- Stir in the paprika and tomato paste to coat the meat and vegetables well.
- Pour in the beef broth and bring to a gentle simmer.
- Reduce the heat, cover, and let it simmer for at least an hour, stirring occasionally.
- Season with salt and pepper in the last few minutes of cooking, and stir in chopped parsley just before serving.
- Ladle the goulash into bowls and enjoy with crusty bread or over buttery potatoes.
