  • 2 red or yellow bell peppers, sliced

  • 2 tbsp good quality Hungarian paprika
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  2. Increase heat to medium-high and add the beef cubes. Sear on all sides until browned, about 8-10 minutes.
  3. Add the bell peppers and carrots, cooking until they start to soften, about 5 minutes.
  4. Stir in the paprika and tomato paste to coat the meat and vegetables well.
  5. Pour in the beef broth and bring to a gentle simmer.
  6. Reduce the heat, cover, and let it simmer for at least an hour, stirring occasionally.
  7. Season with salt and pepper in the last few minutes of cooking, and stir in chopped parsley just before serving.
  8. Ladle the goulash into bowls and enjoy with crusty bread or over buttery potatoes.
