Ingredients
- Fresh or frozen cheese tortellini
- Diced bacon or pancetta
- Fresh minced garlic
- Heavy cream
- Freshly grated Parmesan cheese

Instructions
- Bring a large pot of salted water to a boil and cook the tortellini according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
- In a large skillet over medium heat, cook the diced bacon until crispy, about 5-7 minutes. Remove and set aside, leaving some fat in the pan.
- Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Reduce heat to low. Whisk together heavy cream, Parmesan cheese, and eggs in a bowl then add to the skillet, stirring to create a sauce. Add reserved pasta water as needed for desired consistency.
- Add cooked tortellini and crispy bacon to the skillet and toss until evenly coated.
- Season with black pepper and salt to taste. Garnish with parsley and extra cheese if desired.
