- 1 cup Greek yogurt, plain and unsweetened
- 2 large eggs
- 1/2 cup almond flour or whole wheat flour
- 1/2 cup natural sweetener (like stevia or monk fruit)
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, mix 1 cup of Greek yogurt, 2 large eggs, and 1 teaspoon of vanilla extract until smooth.
- Stir in 1 cup of unsweetened cocoa powder, 1/2 cup of almond flour, 1/2 teaspoon of baking soda, and a pinch of salt. Add the natural sweetener to taste.
- Blend until just combined, being careful not to overmix.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 20-25 minutes, until a toothpick comes out with a few moist crumbs.
- Allow to cool for at least 10 minutes before cutting into squares and serving.
