A rich and airy mousse cake that brings warmth and memories to any gathering, inspired by family traditions and sweet connections.
Ingredients
Scale
- 200g dark or semi-sweet chocolate
- 400ml full-fat whipping cream
- 4 fresh eggs
- 150g granulated sugar
- 2 tsp pure vanilla extract
- 1 packet of gelatin
- 50g cocoa powder
Instructions
- Melt chocolate in a double boiler until smooth and set aside to cool slightly.
- Whip the cream to soft peaks in a large bowl.
- Beat eggs and sugar together until pale and fluffy, about 5-7 minutes.
- Fold melted chocolate into the egg mixture gently.
- Carefully fold the whipped cream into the chocolate-egg mixture in batches.
- Bloom gelatin in warm water as per the package instructions and fold it into the mousse.
- Pour mousse into a prepared cake mold and chill in the refrigerator for at least 4 hours or overnight.
- Prepare additional whipped cream for piping and decorate the top of the cake.
- Slice using a hot knife for clean cuts, and serve garnished with berries or mint leaves.
Notes
For vegan options, substitute eggs with aquafaba and gelatin with agar-agar. Allow sufficient chilling time for best texture.
