Description

A rich and airy mousse cake that brings warmth and memories to any gathering, inspired by family traditions and sweet connections.


Ingredients

Scale
  • 200g dark or semi-sweet chocolate
  • 400ml full-fat whipping cream
  • 4 fresh eggs
  • 150g granulated sugar
  • 2 tsp pure vanilla extract
  • 1 packet of gelatin
  • 50g cocoa powder

Instructions

  1. Melt chocolate in a double boiler until smooth and set aside to cool slightly.
  2. Whip the cream to soft peaks in a large bowl.
  3. Beat eggs and sugar together until pale and fluffy, about 5-7 minutes.
  4. Fold melted chocolate into the egg mixture gently.
  5. Carefully fold the whipped cream into the chocolate-egg mixture in batches.
  6. Bloom gelatin in warm water as per the package instructions and fold it into the mousse.
  7. Pour mousse into a prepared cake mold and chill in the refrigerator for at least 4 hours or overnight.
  8. Prepare additional whipped cream for piping and decorate the top of the cake.
  9. Slice using a hot knife for clean cuts, and serve garnished with berries or mint leaves.

Notes

For vegan options, substitute eggs with aquafaba and gelatin with agar-agar. Allow sufficient chilling time for best texture.
