A deliciously healthy lasagna made with layers of butternut squash, spinach, mushrooms, and creamy cheeses that delight the palate.

- 1 medium butternut squash, peeled and cubed
- 2 cups fresh spinach
- 2 cups mushrooms (cremini or portobello), sliced
- 15 oz ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 medium onion, diced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- Fresh basil and herbs (optional, for flavor)
- 1 egg (optional, for richness)
Instructions
- Preheat oven to 400°F (200°C).
- Prepare the butternut squash by tossing it with olive oil, salt, and pepper; roast for 25-30 minutes until tender.
- Sauté diced onions in olive oil until translucent, add minced garlic, and then the chopped mushrooms; cook until browned.
- In a bowl, mix ricotta with salt, basil, and an egg if desired.
- In a lasagna dish, start layering with roasted butternut squash, cheese mixture, sautéed mushrooms, spinach, and mozzarella; repeat layers.
- Finish with a layer of mozzarella and sprinkle Parmesan on top.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes.
- Let the lasagna rest for 10-15 minutes before cutting.
Notes
For added flavor, consider adding nutmeg or smoked paprika to the cheese mixture. Allow the lasagna to rest for better slicing.
