- 1 medium Green Cabbage, sliced
- 2 large Yukon Gold Potatoes, diced
- 1 medium Yellow Onion, diced

- 4 cups Chicken or Vegetable Broth
- 1 Bay Leaf
- Salt and Pepper to taste
- Olive Oil for cooking
Instructions
- Prep the Ingredients: Dice the potatoes, slice the cabbage, chop the onion, and mince the garlic.
- Cook the Bacon: In a large pot, heat olive oil over medium heat, add diced bacon, and cook until crisp (5-7 minutes).
- Sauté the Aromatics: Add diced onion and cook until translucent (about 3 minutes); then add minced garlic and sauté for an additional minute.
- Add Cabbage and Potatoes: Stir in the cabbage and cook until wilted (2-3 minutes). Add the potatoes and sauté for another minute.
- Pour in the Broth: Add the broth and a bay leaf; bring to a simmer and cover for about 20 minutes, or until potatoes are tender.
- Blend It Up (Optional): Use an immersion blender for a creamier texture, if desired.
- Season to Taste: Stir in the cooked bacon and season with salt, pepper, and any additional herbs.
- Serve It Up: Ladle into bowls and garnish with fresh parsley, serving with bread for a comforting meal.
