Ingredients

  • 4 cups chicken broth (low-sodium)
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 2 cups carrots (chopped)
  • 2 cups celery (chopped)
  • 1 bell pepper (chopped)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup sour cream or cream cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Season the chicken with salt, pepper, garlic powder, and herbs. Let it marinate for 15–20 minutes.
  2. In a skillet, heat olive oil and sauté chopped onions and minced garlic until fragrant.
  3. Place the chicken at the bottom of the crockpot, then add the sautéed onions and garlic.
  4. Add chopped carrots, celery, and bell pepper on top of the chicken.
  5. Pour in the chicken broth and add sour cream or cream cheese.
  6. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  7. Taste and adjust seasonings 30 minutes before serving. Serve with a garnish of fresh herbs or cheese if desired.

Notes

For a vegetarian option, substitute chicken with tofu and chicken broth with vegetable broth. You can add other vegetables based on preference.
