- 2 pounds boneless chicken thighs or breasts
- 4 cups chicken broth (low-sodium)
- 1 medium onion (chopped)
- 4 cloves garlic (minced)
- 2 cups carrots (chopped)
- 2 cups celery (chopped)
- 1 bell pepper (chopped)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 cup sour cream or cream cheese
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Season the chicken with salt, pepper, garlic powder, and herbs. Let it marinate for 15–20 minutes.
- In a skillet, heat olive oil and sauté chopped onions and minced garlic until fragrant.
- Place the chicken at the bottom of the crockpot, then add the sautéed onions and garlic.
- Add chopped carrots, celery, and bell pepper on top of the chicken.
- Pour in the chicken broth and add sour cream or cream cheese.
- Cover and cook on low for 6–8 hours or high for 3–4 hours.
- Taste and adjust seasonings 30 minutes before serving. Serve with a garnish of fresh herbs or cheese if desired.
Notes
For a vegetarian option, substitute chicken with tofu and chicken broth with vegetable broth. You can add other vegetables based on preference.
