Ingredients

- 2 cups powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup heavy cream (or coconut cream)
- 1 teaspoon peppermint extract (or fresh mint)
- 8 oz dark chocolate (at least 60% cocoa)
- 1 teaspoon coconut oil (optional for melting chocolate)
Instructions
- In a mixing bowl, combine powdered sugar, cocoa powder, heavy cream, and peppermint extract. Stir until smooth.
- Scoop out portions of the filling and roll them into balls, then flatten into discs.
- Chill the discs on a baking sheet lined with parchment paper for about 30 minutes.
- Melt the dark chocolate over a double boiler or in the microwave, stirring in coconut oil to make it fluid.
- Dip each chilled patty into the melted chocolate, allowing excess to drip off, and place them back on the parchment.
- Let the chocolate harden at room temperature or in the fridge.
Notes
Store leftovers in an airtight container in the refrigerator for up to two weeks. These patties also freeze beautifully for about three months.
