Ingredients

  • 1 cup cottage cheese
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 anchovy fillet or 1 teaspoon anchovy paste
  • Juice of 1 fresh lemon
  • 1/2 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Water (as needed for consistency)

Instructions

  1. In a food processor, combine cottage cheese, minced garlic, Worcestershire sauce, anchovy fillet (or paste), and lemon juice.
  2. Blend until smooth, scraping down the sides as needed.
  3. While the processor is running, gradually add olive oil until emulsified and creamy.
  4. Stir in grated Parmesan cheese and season with salt and pepper to taste. Add a splash of water if too thick.
  5. Refrigerate for at least 30 minutes before serving.
