A creamy and tangy dressing that transforms any salad into a feast, featuring cottage cheese and fresh herbs.
Ingredients

- 1 cup cottage cheese
- 2 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 anchovy fillet or 1 teaspoon anchovy paste
- Juice of 1 fresh lemon
- 1/2 cup olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Water (as needed for consistency)
Instructions
- In a food processor, combine cottage cheese, minced garlic, Worcestershire sauce, anchovy fillet (or paste), and lemon juice.
- Blend until smooth, scraping down the sides as needed.
- While the processor is running, gradually add olive oil until emulsified and creamy.
- Stir in grated Parmesan cheese and season with salt and pepper to taste. Add a splash of water if too thick.
- Refrigerate for at least 30 minutes before serving.
Notes
This dressing keeps well in the fridge for up to a week. Experiment with different herbs and adjust flavors to preference.
