- 1 box Jiffy Corn Muffin Mix
- 1 can corn (drained)
- 1 can creamed corn
- 1 cup sour cream (or Greek yogurt)
- 1/2 cup butter (melted)
- 2 eggs
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the Jiffy Corn Muffin Mix, canned corn, creamed corn, sour cream, and melted butter until well blended.
- In a separate bowl, beat the eggs and then fold them into the corn mixture.
- Grease a casserole dish and pour the mixture in, smoothing the top for an even bake.
- Bake for 45 minutes, until the top is golden and the center is set.
- Let it cool for a few minutes before serving.
