- 2 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 1 large cucumber, grated and excess moisture squeezed out
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/2 red onion, diced
- Salt and pepper to taste
- Optional: additional veggies like bell peppers or cherry tomatoes
- Optional: feta cheese for topping
Instructions
- Season chicken with salt, pepper, and olive oil, then grill or sauté until fully cooked. Allow to rest before slicing.
- In a bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, olive oil, salt, and pepper until creamy.
- Toss the sliced chicken, tzatziki sauce, diced red onion, and any additional veggies in a large bowl.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve in pita pockets or over a bed of greens, and optionally top with extra dill or feta cheese.
Notes
For a vegetarian option, substitute chicken with grilled shrimp or chickpeas. Adjust seasonings to suit your taste, and allow flavors to meld by chilling before serving.
