Ingredients

- 4 ears of fresh corn, boiled or grilled
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- Juice of 2 limes
- 1 tsp chili powder
- 1/4 cup fresh cilantro, chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup Cotija cheese, crumbled
- Salt to taste
Instructions
- Boil or grill corn until tender; let cool, then cut kernels off the cob.
- In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, and salt.
- Fold in chopped cilantro and red onion.
- In a large bowl, mix corn with the dressing until well coated; sprinkle cheese on top.
- Chill for at least 30 minutes before serving.
Notes
For a healthier option, substitute Greek yogurt for mayonnaise. Allowing the salad to chill helps meld the flavors.
