  • ½ cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham crackers, granulated sugar, and melted butter. Press firmly into the bottom of a greased muffin tin.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla, mixing until creamy.
  4. Add eggs one at a time, mixing gently until just combined. Fold in sour cream.
  5. Spoon the filling over the prepared crusts, filling each cup about ¾ full.
  6. Bake for 20-25 minutes until just set but still jiggly in the middle.
