- 1 ½ cups finely crushed graham crackers
- ⅓ cup granulated sugar
- ½ cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 eggs, at room temperature
- ½ cup sour cream
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham crackers, granulated sugar, and melted butter. Press firmly into the bottom of a greased muffin tin.
- In a large bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla, mixing until creamy.
- Add eggs one at a time, mixing gently until just combined. Fold in sour cream.
- Spoon the filling over the prepared crusts, filling each cup about ¾ full.
- Bake for 20-25 minutes until just set but still jiggly in the middle.
- Allow to cool at room temperature for about 30 minutes, then chill in the fridge for at least 2 hours or overnight before serving.
- Top with fresh fruit, whipped cream, or chocolate drizzle before serving.
Notes
For a healthier option, you can substitute Greek yogurt for sour cream. Use gluten-free graham crackers for a gluten-free version.
