- 2 cups fresh spinach, chopped
- 1 cup cottage cheese
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs (dill or chives)

- Olive oil, for cooking
Instructions
- Wash and finely chop the fresh spinach. Set it aside.
- In a large mixing bowl, combine cottage cheese, chopped spinach, beaten egg, and minced garlic. Mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and pepper. Gradually incorporate this mixture into the wet ingredients, stirring until a dough forms.
- Knead lightly on a floured surface until smooth. If it’s too sticky, add a bit more flour.
- Divide the dough into equal portions and shape them into flat rounds, about ½ inch thick.
- Heat a skillet over medium heat with a splash of olive oil. Cook the flagels in batches, about 4-5 minutes on each side, or until golden brown.
- Serve warm, drizzled with olive oil or topped with your favorite spreads.
