- 2 cups old-fashioned oats
- 1 cup cottage cheese
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk or plant-based alternative
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a blender, combine the oats, cottage cheese, eggs, honey or maple syrup, and a splash of milk. Blend until the mixture is smooth and well-combined.
- Add baking powder and salt, and blend for a few seconds just to mix.
- If adding fruits or spices, fold them into the mixture after blending.
- Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 20-25 minutes or until a toothpick comes out clean. Cool on a wire rack before enjoying.

For variations, consider adding cinnamon, vanilla extract, or fruits like blueberries for added flavor.
