Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 8 oz cream cheese, softened
  • 1 cup fresh mushrooms, diced
  • 2 cups spinach, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter (for sautéing)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Dice chicken into bite-sized pieces and season with salt, pepper, and herbs.
  3. In a skillet, heat olive oil over medium heat and sauté onions and garlic until fragrant.
  4. Add mushrooms and spinach to the skillet, cooking until softened.
  5. In a mixing bowl, combine sautéed veggies, chicken, cream cheese, and half the cheese. Mix until coated.
  6. Transfer mixture into a greased baking dish and spread evenly.
  7. Sprinkle remaining cheese on top.
  8. Bake for 25-30 minutes until golden and bubbly.
  9. Let sit for a few minutes before serving.

Notes

For added crunch, broil for the last few minutes of baking. Leftovers can be stored in the fridge for up to three days.
