- 1 lb boneless, skinless chicken breasts, diced
- 8 oz cream cheese, softened
- 1 cup fresh mushrooms, diced
- 2 cups spinach, chopped
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1/2 onion, diced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 tbsp olive oil or butter (for sautéing)
Instructions
- Preheat the oven to 350°F (175°C).
- Dice chicken into bite-sized pieces and season with salt, pepper, and herbs.
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until fragrant.
- Add mushrooms and spinach to the skillet, cooking until softened.
- In a mixing bowl, combine sautéed veggies, chicken, cream cheese, and half the cheese. Mix until coated.
- Transfer mixture into a greased baking dish and spread evenly.
- Sprinkle remaining cheese on top.
- Bake for 25-30 minutes until golden and bubbly.
- Let sit for a few minutes before serving.
Notes
For added crunch, broil for the last few minutes of baking. Leftovers can be stored in the fridge for up to three days.
