- Zest of 1 lemon

Instructions
- Preheat your oven to 350°F (175°C) and grease a large baking tray.
- Cream together softened butter and sugars until light and fluffy.
- Add in the eggs and mix until well combined, then stir in the vanilla extract.
- In another bowl, whisk together flour, baking powder, spices, and citrus zest.
- Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
- Gently fold in mixed dried fruits and chopped nuts until evenly distributed.
- Pour the batter into the prepared baking tray, smoothing the top for even baking.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Once cooled, dust with powdered sugar for a festive touch.
Notes
For added moisture, consider soaking dried fruits in warm water, rum, or orange juice for about an hour before adding to the batter.
