- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 3 large eggs
- 1 cup mixed dried fruits (such as apricots, figs, cranberries, and raisins)
- 1 cup chopped walnuts or pecans
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cardamom
- 1 teaspoon vanilla extract
- Zest of 1 orange
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
- In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and cardamom.
- In a large bowl, beat together the softened butter and brown sugar until light and fluffy (about 3-4 minutes).
- Gradually add the eggs, one at a time, mixing well after each addition along with the vanilla extract.
- Alternately add the dry ingredients and chopped dried fruits to the wet mixture, folding in the chopped nuts until evenly distributed.
- Stir in the citrus zests.
- Pour the batter into the prepared tray and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the tin for 10 minutes before cooling completely on a wire rack.
- Slice into generous squares and dust with powdered sugar before serving.

You can tailor the mix of fruits and nuts to your family’s preferences. For a gluten-free version, use gluten-free all-purpose flour.
