  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup mixed dried fruits (such as apricots, figs, cranberries, and raisins)
  • 1 cup chopped walnuts or pecans
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and cardamom.
  3. In a large bowl, beat together the softened butter and brown sugar until light and fluffy (about 3-4 minutes).
  4. Gradually add the eggs, one at a time, mixing well after each addition along with the vanilla extract.
  5. Alternately add the dry ingredients and chopped dried fruits to the wet mixture, folding in the chopped nuts until evenly distributed.
  6. Stir in the citrus zests.
  7. Pour the batter into the prepared tray and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool in the tin for 10 minutes before cooling completely on a wire rack.
  10. Slice into generous squares and dust with powdered sugar before serving.
