Ingredients

- 2 cups cooked chicken, shredded (boneless, skinless chicken breasts or rotisserie chicken)
- 2 ripe avocados, diced
- 1/4 cup fresh herbs (cilantro or parsley)
- 8 large lettuce leaves (butter lettuce or romaine)
- Juice of 1 lime
- Salt and pepper to taste
- Optional: garlic powder, diced bell peppers, or cucumbers
Instructions
- If using uncooked chicken, season lightly with salt and pepper and grill or bake at 375°F until fully cooked (20-30 minutes). Shred the chicken when cool.
- In a bowl, combine the shredded chicken and diced avocado. Squeeze lime juice over the mixture to prevent browning and add flavor. Toss gently.
- Fold in fresh herbs and optional diced veggies.
- Rinse lettuce leaves under cold water and pat dry. Lay them out on a platter.
- Scoop a generous amount of the chicken salad into each lettuce leaf and serve.
Notes
Avocado provides healthy fats while chicken offers lean protein. Leftovers can be stored in the refrigerator for up to 2 days, but keep lettuce separate.
