A delightful overnight casserole featuring crusty bread soaked in a rich egg and milk mixture, layered with fresh blueberries for a sweet and gooey breakfast treat.

- 1 loaf rustic French bread or brioche, cut into bite-sized cubes
- 6 large eggs
- 2 cups whole milk (or almond/oat milk for dairy-free)
- 1/2 cup granulated sugar (or coconut/brown sugar)
- 2 cups fresh blueberries (or thawed frozen blueberries)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup unsalted butter, melted
Instructions
- Cut the bread into cubes and let it sit out for a few hours or overnight to dry out slightly.
- In a large bowl, whisk together eggs, milk, sugar, vanilla extract, and a sprinkle of salt.
- In a greased baking dish, layer half of the bread cubes, then half of the blueberries. Repeat the layers and pour the egg mixture over the top.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
- Preheat the oven to 350°F (175°C). Remove the casserole from the fridge, drizzle melted butter over the top, and bake for 40-50 minutes until puffed and golden.
- Allow to cool slightly before serving. Drizzle with syrup or sprinkle with powdered sugar before enjoying.
Notes
For the best results, use day-old bread and do not skip the chilling time. Serve with syrup or whipped cream for added sweetness.
