- 8 slices brioche or challah bread
- 2 cups fresh blueberries
- 6 large eggs
- 2 cups whole milk (or almond/coconut milk)
- 3/4 cup granulated sugar (or brown sugar/honey)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Butter or non-stick spray for greasing
- Powdered sugar for serving
- Maple syrup for drizzling
Instructions
- Slice the bread into 1-inch thick slices, preferably using day-old bread.
- Grease a 9×13 inch baking dish with butter or non-stick spray and arrange half the bread slices in a layer at the bottom.
- Sprinkle half of the blueberries over the layer of bread.
- In a large bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon until combined.
- Pour half of the custard mixture over the bread and blueberries.
- Repeat with the remaining slices of bread, top with the rest of the blueberries and custard.
- Cover the casserole with plastic wrap and refrigerate overnight.
- Preheat the oven to 350°F (175°C).
- Bake for 45-55 minutes until golden brown and set; cover with foil if browning too quickly.
- Let cool slightly, dust with powdered sugar or drizzle with maple syrup, and serve warm.
Notes
Ensure to use stale bread for better absorption and allow it to soak overnight for optimal flavor.
