- 2 lbs Beef Chuck Roast
- 2 Sweet Onions, sliced
- 4 cloves Fresh Garlic, minced
- 1 tbsp Smoky Paprika
- 1 tbsp Cumin
- 1 tsp Cayenne Pepper
- 1 tsp Black Pepper
- 1 cup Beef Broth
- 1 cup Barbecue Sauce
- 4 Soft Buns (brioche or potato rolls)
- Optional Toppings: Freshly shredded coleslaw, sliced jalapeños, pickles
Instructions
- Season beef roast with salt, pepper, and spices; let sit for 30 minutes.
- In a hot skillet, sear the beef for 2-3 minutes on each side until browned.
- Remove beef and sauté onions in the same skillet until soft; add garlic and sauté until fragrant.
- Place beef back into the slow cooker with onions, garlic, broth, and barbecue sauce; cook on low for 8 hours or high for 4-5 hours.
- Shred beef in the slow cooker and mix with sauce.
- Toast buns lightly and assemble pulled beef with fresh coleslaw and toppings.
- Serve warm and enjoy!
