Ingredients

  • 2 lb Beef Chuck Roast
  • 1 Onion, diced
  • 4 Garlic cloves, minced
  • 1 cup BBQ Sauce
  • 1 tsp Liquid Smoke
  • 2 tbsp Brown Sugar
  • Coleslaw mix or homemade coleslaw for topping
  • Buns for serving

Instructions

  1. Sear the beef in a skillet over medium-high heat for 4-5 minutes until caramelized.
  2. Transfer beef to slow cooker. Sauté onions and garlic for 3-4 minutes then add to slow cooker.
  3. Pour BBQ sauce, liquid smoke, and brown sugar over the beef.
  4. Cook on low for 8 hours or high for 4 hours.
  5. Shred beef and mix with sauce.
  6. Prepare coleslaw by mixing cabbage, carrots, mayo, vinegar, salt, and pepper.
  7. Toast buns, pile on beef, and top with coleslaw.
  8. Serve warm and enjoy!
