- 1 cup semi-sweet chocolate chips
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1 tablespoon citrus zest (lemon or orange)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan with butter or line it with parchment paper.
- In a large mixing bowl, combine the ricotta cheese, granulated sugar, and eggs. Beat until smooth and creamy.
- Mix in the vanilla extract and citrus zest.
- In another bowl, whisk together the flour and baking powder.
- Slowly add the dry ingredients to the ricotta mixture, stirring until just combined.
- Gently fold in the chocolate chips.
- Pour the batter into the prepared cake pan, spreading it evenly.
- Bake for 45-50 minutes or until golden and a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack.
- Top with powdered sugar before serving if desired.
Notes
Serve with fresh berries or whipped cream for added sweetness. The cake can also be paired with a cup of espresso.
