  • 1 tablespoon citrus zest (lemon or orange)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or line it with parchment paper.
  3. In a large mixing bowl, combine the ricotta cheese, granulated sugar, and eggs. Beat until smooth and creamy.
  4. Mix in the vanilla extract and citrus zest.
  5. In another bowl, whisk together the flour and baking powder.
  6. Slowly add the dry ingredients to the ricotta mixture, stirring until just combined.
  7. Gently fold in the chocolate chips.
  8. Pour the batter into the prepared cake pan, spreading it evenly.
  9. Bake for 45-50 minutes or until golden and a toothpick inserted comes out clean.
  10. Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack.
  11. Top with powdered sugar before serving if desired.

Notes

Serve with fresh berries or whipped cream for added sweetness. The cake can also be paired with a cup of espresso.
