Ingredients

  • 1 head Romaine lettuce, chopped
  • 100g sliced peppered salami
  • 100g capicola, sliced
  • 50g pepperoncini, sliced
  • 200g cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 30g fresh basil, chopped
  • 30g fresh parsley, chopped
  • 60ml extra virgin olive oil
  • 30ml red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Wash and dry the Romaine lettuce, then chop it into bite-sized pieces and place in a large bowl.
  2. Add the sliced salami and capicola, distributing evenly.
  3. Incorporate the cherry tomatoes and pepperoncini.
  4. Thinly slice the red onion and sprinkle it over the salad.
  5. Chop the fresh basil and parsley, adding them to the salad.
  6. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper. Taste and adjust seasonings if needed.
  7. Drizzle the dressing over the salad and toss gently to combine.
  8. Serve immediately or let it sit for a few minutes to enhance the flavors before serving.
