- 1 head Romaine lettuce, chopped
- 100g sliced peppered salami
- 100g capicola, sliced
- 50g pepperoncini, sliced
- 200g cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 30g fresh basil, chopped
- 30g fresh parsley, chopped
- 60ml extra virgin olive oil
- 30ml red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Wash and dry the Romaine lettuce, then chop it into bite-sized pieces and place in a large bowl.
- Add the sliced salami and capicola, distributing evenly.
- Incorporate the cherry tomatoes and pepperoncini.
- Thinly slice the red onion and sprinkle it over the salad.
- Chop the fresh basil and parsley, adding them to the salad.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper. Taste and adjust seasonings if needed.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or let it sit for a few minutes to enhance the flavors before serving.
