  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup buttermilk or yogurt
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, toss the diced pears with lemon juice.
  3. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time and mix in vanilla extract.
  5. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, mixing until just combined.
  7. Fold in the diced pears gently.
  8. Pour the batter into the prepared cake pan and bake for 40-50 minutes, until a toothpick comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar before serving if desired.
