Ingredients

  • 1 lb Italian sausage (sweet or spicy)
  • 4 medium potatoes (Russet or Yukon Gold)
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cups chicken or vegetable broth
  • Fresh parsley or rosemary, for garnish
  • Optional: spinach or kale

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, crumble and brown the Italian sausage until cooked.
  3. Add the diced onions, bell peppers, and minced garlic, sauté until onions become translucent.
  4. Thinly slice the potatoes while the sausage mixture cooks.
  5. In a greased casserole dish, layer half the potatoes, then the sausage mixture, followed by the remaining potatoes.
  6. Pour the broth over the top.
  7. Sprinkle mozzarella and Parmesan cheese generously on top.
  8. Cover with foil and bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  9. Let it rest for 10 minutes before serving.

Notes

For a lighter version, substitute regular potatoes with cauliflower or use ground turkey/chicken instead of sausage.
