- 1 lb Italian sausage (sweet or spicy)
- 4 medium potatoes (Russet or Yukon Gold)
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cups chicken or vegetable broth
- Fresh parsley or rosemary, for garnish
- Optional: spinach or kale
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, crumble and brown the Italian sausage until cooked.
- Add the diced onions, bell peppers, and minced garlic, sauté until onions become translucent.
- Thinly slice the potatoes while the sausage mixture cooks.
- In a greased casserole dish, layer half the potatoes, then the sausage mixture, followed by the remaining potatoes.
- Pour the broth over the top.
- Sprinkle mozzarella and Parmesan cheese generously on top.
- Cover with foil and bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden.
- Let it rest for 10 minutes before serving.
Notes
For a lighter version, substitute regular potatoes with cauliflower or use ground turkey/chicken instead of sausage.
