Instructions
- Make the Crepes: In a large bowl, whisk together eggs, milk, flour, and a pinch of salt until smooth. Let the batter rest, then pour a ladleful into a heated skillet, swirling to coat the bottom of the pan. Cook until the edges lift, then flip and cook briefly on the other side. Repeat until you have a gorgeous stack of crepes.
- Prepare the Filling: In a mixing bowl, whip the heavy cream until soft peaks form. Gently fold in powdered sugar, lemon juice, and jasmine extract until well blended. Set aside.
- Create the Grape Compote: In a saucepan, lightly simmer halved green grapes with a touch of sugar and lemon juice until they soften. Mash lightly for a lovely texture while leaving some pieces whole.
- Assemble the Mille Crepe Roll: Layer crepes, spreading a layer of cream on top of each. Follow with a smattering of grape compote before adding the next crepe. Continue until you have a beautiful stack.
- Chill and Slice: Refrigerate for a few hours to allow the flavors to meld. To serve, slice into elegant rolls and enjoy the colors and textures.
